OLIVE GROVE

The olive grove at Tarci is located at an altitude of about 500m a.s.l.

SOIL

Macigno del Chianti (arenarie).

HARVEST

The Frantoio olives were harvested exclusively by hand with olive rakes on October 20, 2022.

CRUSHING

The olives were processed within eight hours of harvesting in a continuous-cycle mill. Hammer crusher. The pasta was churned for 30 minutes at 25°C. Extraction with three-way decanter.

Growing Season

The 2022 olive crop started earlier due to this year’s anomalous climatic conditions.
The summer heat, which lasted until late October, prevented the spread of the much-feared olive fly. Therefore, treatments were unnecessary, and the small fruits were perfectly healthy at the time of harvesting.

Storage

Upon arrival at the storage area, the oil was filtered and stored in stainless steel containers in an environment protected from the air.

Bottling

1600 bottles of 0,25 liter.

Acidity = 0.26% in oleic acid
Number of peroxides = 5..39 meq O2/Kg
Polyphenols = 532mg/kg
Vitamin E: n.a. mg/Kg

Tasting Notes

Green color with golden hues. Medium intensity nose evoking artichoke, cut grass, and green olive. In the palate, it is elegant, fluid, with spiciness and bitterness in perfect balance. Long and persistent, with the olfactory notes lingering.
