The olive groves at Brolio are located at 350-500m a.m.s.l.

The olives were harvested by hand with olive rakes on the second ten days of October 2021.
The olives were processed within eight hours of harvesting in a continuous-cycle mill. The pasta was churned for 30 minutes at 25°C.
Upon arrival at the storage area, the oil was filtered and stored in stainless steel containers in an environment protected from the air.
A complex year, above all due to the great drought and the heat of the summer that caused many olives to fall before ripening. The harvest was thus certainly less abundant than that of 2020.

Beautiful bright green color and an intense, fruity bouquet, with notes of fresh cut grass and green olives. In the mouth it is very delicate and with a good balance between spiciness and bitterness.
